Ingredient Substitutions

Baking ingredients can sometimes be replaced when you run out of an item that a recipe calls for, but substituting ingredients can change the taste and texture of the finished product.

Below are common ingredient substitutions:

Ingredient to replace - (amount)

All Purpose Flour (1 cup)

  • 1/2 cup Cake Flour and 1/2 cup Whole Wheat Flour
  • 1 cup + 2 Tbsp of Cake Flour

Arrowroot (1 Tbsp)

  • 1 Tbsp of cornstarch
  • 1 Tbsp of potato starch

Baking Powder (1 tsp)

  • 1/4 tsp of baking soda, 1/2 tsp of cream tartar and 1/4 tsp of cornstarch

Baking Soda (1/2 tsp)

  • 1/2 tsp of potassium bicarbonate
  • 2 tsp baking powder

Bread Crumb (1 cup)

  • 3/4 cup of cracker crumb
  • 3/4 cup of crushed cornflakes

Buttermilk (1 cup)

  • 1 Tbsp of lemon juice and add enough milk to equal a one cup (let stand for 5 - 10 minutes).
  • 1 cup of milk and 1 1/2 tsp of cream of tartar
  • 1 cup of sour cream

Cardamom (1 tsp)

  • 3/4 tsp of ground cinnamon and 1/4 tsp of lemon zest

Chocolate, Unsweetened (1 oz)

  • 3 Tbsp Cocoa Powder and 1 Tbsp Butter
  • 1.5 oz Bittersweet chocolate and reduce sugar on recipe by 4 Tbsp

Cornstarch (1 Tbsp)

  • 2 Tbsp of all-purpose flour
  • 1 Tbsp of arrowroot or potato starch
  • 2 Tbsp of instant tapioca

Cream [Half and Half] (1 cup)

  • 1/2 cup Skim Milk and 1/2 cup Heavy Cream

Cream of Tartar (1/2 tsp)

  • 1/2 tsp lemon juice or vinegar

Creme Fraiche (1 cup)

  • 1 cup Mascarpone Cheese
  • 1 cup Yogurt
  • 1/2 cup Sour Cream and 1/2 cup Heavy Cream

Gelatin (1/4 oz)

  • 4 Leaves Sheet Gelatin
  • 1/4 oz Agar Agar

Mascarpone​ (1 cup)

  • 1 cup Creme Fraiche
  • 3/4 cup Whipped Cream Cheese and 1/4 cup Heavy Cream

Pumpkin Spice (1 tsp)

  • 1/2 tsp Cinnamon
  • 1/4 tsp Ginger
  • 1/8 tsp Allspice
  • 1/8 tsp Nutmeg

Sour Cream (1 cup)

  • 1 cup Greek Yogurt
  • 1 cup Creme Fraiche
